Observed metal containers vertically wet stacked by dish room in main kitchen.

CA: Equipment and utensils after cleaning and sanitizing, shall be air-dried or used after adequate draining before contact with food.

COS: PIC moved containers to be washed, rinsed, sanitized and then air-dried before use.

Observed can of energy drink and reusable drink in food prep areas. Corrective Action: PIC removed these two items. Discussed with PIC that these two items are only allowed in designated employee areas such as break rooms and office. Discussed that a single service cup with a lid and straw is allowed in food prep areas where they can't contaminate any food or food prep areas especially if spilled. They must be handled so that employee's hands, the container, exposed food, clean equipment, utensils and linens, unwrapped single-service and single-use articles are protected from contamination.

Observed improper storage of tongs at milkshake topping station. Scoop handle was in contact with cherries. CA: Instructed PIC to remove the tongs. PIC removed the tongs and placed a cup for tongs to be stored in

Observed 12qt containers stored on rack above 3comp dish sink. Containers were stacked together vertically while still wet. CA: Discussed air drying requirement after sanitizing with PIC. PIC had containers moved to the drying rack
