Observed cup of sanitizer used for shake machine stored over open SSA. CA: PIC must ensure sanitizer is stored where it cannot contaminate items if spilled COS: Sanitizer was moved

Observed dumpster with doors open. CA: PIC must ensure dumpster is kept closed COS: doors were closed

Bacon found stored in steam table uncovered and subject to contamination./advised item must be covered when not being used, item was covered

Single use articles and/or single service articles are not being kept in the original protective package or are not being stored by using other means that afford protection form contamination until they are used./Advised to keep cups in plastic and slide down as needed

Observed several items wet stacked. Corrective Action: Discussed with PIC that the final step in sanitizing dishes and utensils is to allow them to air dry before stacking them. Recommended that they obtain a rolling drying rack should they lack sufficient room to allow for correct air drying. PIC removed the items and set them out to properly air dry.
