Observed expired dairy- yogurt- since 08/2025, store in the front service reach in the cooler. Ensure to discard all expired or sell-by date food items. COS the concerned foods were discarded.

Observed pink mold-like substance on both sides of the dripping plate in the ice machine. The person in charge was informed to clean and sanitize frequently to prevent mold build-up. COS: The dripping plate was removed to be clean.

Observed time/temperature control for safety (TCS) foods not dated with the discard date and the day the food items were open in the cooler's front reach. Basil, mayo, cream cheese, and heavy cream were not date marks. Corrective action (CA) All ready-to-eat food and TCS foods shall be marked with the day they have been prepped or opened, especially with the discard date of 7 days max for cold holding and if they are held for more than 24 hours. corrected on-site (COS) some of the concerned foods were dated marked since they were open on the day of the inspection and prep the day before, others were discarded.

Food Safety Manager certification is expired since 8/2023. CA: a CFSM certificate which has expired, been revoked or suspended shall not be posted in the food service establishment. COS expired CSFM certificate was removed, and the chef was informed that the food establishment is required to have a CSFM certificate up to date.
