Observed several food items-frozen meat in the 2-door reach in cooler, drink tea containers, ice bin in the bar area- not covered or resealed properly as required/ CA: all packaged and unpackaged food shall be covered or resealed properly unless when they are actively cooling may be uncovered if on a speed rack or the top shelf.
4-2B - food-contact surfaces: cleaned & sanitized

Observed brown/black stain mold-like substance on the top inside surface of the ice machine. CA: all food contact surfaces shall be cleaned and sanitized frequently to prevent build up or accumulation. if stain cannot be removing ice machine shall be replaced. Ice machine shall be cleaned and sanitized by 04/16/2026

Observed sanitizer bucket in the main kitchen(line) and cleaning station (dining area) with no proper QUART sanitizer concentration, CA: when actively using sanitizer, ensure the QUART sanitizer is between 150ppm-400ppm as required. COS sanitizers were changed.

No proper method used to cleaned dining tables; facility only used on sanitizer bucket: CA: person in charge was informed to used two buckets method which is to have 2 sanitizer buckets: one to clean the tables and second to sanitize the tables. Note bucket must be identified (labeled or differentiated by color) or used single paper towel and a spray bottled labeled.

Observed food employees / handler with watches, bracelets on their wrist. No more than plain wedding band on wrist and hands.

Observed food employees/handler in the main line with beards longer than 1/2 inches, in dessert station with loose hairs. Ensure food employees wear a beard, hair restraint. visor, hair beard nets, caps are allowed.
