Observed potentially hazardous TCS food (nacho cheese) hot holding in warming cabinet below 135 degrees F. Per discussion with food service employee and PIC, the cheese sauce was supposed to go in the oven to be reheated to 150 deg F before being placed in the warming cabinet for hot holding.

Corrective Action: Discussed critical control points for reheating and hot holding with PIC. Because the cheese sauce was less than 2 hours old, the container was placed in the oven to be reheated to 165 deg F before being placed in the warming cabinet for hot holding.
