Burger patties were removed from walk-in cooler less than 4 hours before being placed in prep top cooler drawer. PIC had remaining burger patties cooked to 165 to be used for other menu items. PIC will monitor temperatures in prep top cooler unit and have unit serviced to ensure cold holding at 41 degrees or below.
