Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; hot holding (p)
observed red sauce hot holding on steam table less than 135 degrees F. less than 4 hr. CA: Discussed hot holding with pic. COS: pic reheated to 171 degrees F (more than 165) and will monitor hot holding temperatures and reheating before sauce is placed onto hot hold from cooler.
6-1D - time as a public health control: procedures and records
Regulation: 511-6-1.04(6)(i) - time as a public health control (tphc) (p, pf, c)
Observed employees not taking temperatures of pizza used on time control as specified in procedure. CA: Discussed verifying temperature of pizza when starting time with pic. COS: pic discarded pizza on time and reheated pizza in oven to 165 degrees F.
2-2B - proper eating, tasting, drinking, or tobacco use
Regulation: 511-6-1.03(5)(k)1&2 - eating, drinking, or using tobacco (c)
observed personal drink not in single use cup with lid and straw stored on prep table. CA: Discussed proper storage area and drinks should be in single use cup with lid and straw with pic. COS: pic put drink into proper cup and stored away from food.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(b) - food contact surfaces and utensils - cleaning frequency (p, c)
observed slicer used for deli meats and cheese not used today with food debris build up. CA: Discussed frequency and methods of cleaning with pic. COS: pic is cleaning and health dept. will re-check 11/20.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed wiping towel sanitizer not at minimum ppm for chlorine (bleach) used. CA: Discussed minimum ppm with pic. COS: pic discarded and remade and tested.
12A - contamination prevented during food preparation, storage, display
Regulation: 511-6-1.04(4)(r) - food storage, prohibited areas (c)
observed pans of dough stored on top of trash can. CA: Discussed storage of food in clean/sanitized locations to prevent contamination with pic. COS: pic removed pan of dough from trash can and removed dough from pan and pans were placed in the dish cleaning area.
