6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed TCS food items held in grill prep merchandise cooler measuring above 41 degrees F. COS: PIC relocated to walk in cooler. Must take unit out of service for TCS food items and purchase new commercial reach in cooler. Also observed a residential fridge in main kitchen measuring above 41 degrees F and TCS items inside measuring above 41 degrees F. PIC also relocated these items to walk in cooler. Must purchase and replace commercial reach in cooler (not residential or merchandise cooler. Must submit manufacturer specification sheet to health authority. Residential reach in cooler must be taken out of service for TCS food items. CA: All TCS food items must be cold held at 41 degrees F or below.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed chemical sanitize concentration at 0 ppm chlorine at dish machine. Advised PIC dish machine shall read between 50 - 100 ppm chlorine. Advised to have machine serviced and manually wash dishes. REPEAT. MUST CORRECT BY 6/13/2026.
14A - in-use utensils: properly stored
Regulation: 511-6-1.04(4)(k) - in-use utensils, between-use storage (c)
Observed scoops with handles facing directly down into bulk food ingredients (sugar & beans.) COS: PIC moved scoops with handles facing bulk food ingredients. CA: Keep scoop with handles facing up.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(a) - good repair & proper adjustment (c)
Observed reach in cooler (merchandise cooler) and residential reach in cooler not maintaining temps 41 degrees F or below. Advised must replace with commercial coolers and submit spec sheet to health authority. MUST NOT USE FOR TCS FOOD ITEMS. CA: All equipment shall be kept in good repair and proper adjustment.
