Routine
6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed reach-in cooler beside freezer not in temperature. Cold holding items must be 41F or below. Eggs temping at 44F and ambient reach-in cooler temp at 46F. Ensure all cold holding items are 41F or below. Add a thermometer inside of reach-in cooler as the digital thermometer could be broken. Items moved to Other reach-in cooler.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed 3-compartment sink sanitizer concentration reading at 0-50ppmQ. Sanitizer must be a minimum of 150ppmQ to effectively sanitize food contact surfaces. Will be back to confirm 3-compartment sink sanitizer concentration is at least 150ppmQ.
Observed both ice machines with accumulation. Ensure to clean ice machines more frequently to avoid build-up.
12A - contamination prevented during food preparation, storage, display
Regulation: 511-6-1.04(4)(q) - food storage (c)
Observed multiple containers of coffee grounds on the floor along with boxes of syrups on the ground. Make sure all items are protected and a min. of 6" above the floor to properly clean.
12B - personal cleanliness
Observed employees making drinks without hair restraints. Make sure all food handlers are wearing hair restraints to protect food from contamination.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Rags not stored in sanitizer. Ensure rags are only used to be in sanitizer not to be used under simple syrups to catch excess spilled syrup. Clean surface frequently.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed freezer leaking condensation. There is water on the floor ensure to repair freezer so it does not leak condensation and so employees do not slip on water.
Observed multiple coffee grounds on ground behind coffee roaster machine. Ensure to clean frequently so ground is not covered in grounds and insects do not come into facility.
