4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
3 compartment sink not dispensing sanitizer. On-site dish machine also down for maintenance. Dishes and utensils will have to be taken to sister facility next door for washing and cleaning. Repair sanitizer dispenser at 3 compartment sink immediately.
10D - food properly labeled; original container
Regulation: 511-6-1.04(8)(b) - expired foods (p)
Expired canned goods in emergency stockpile. These items must be kept in date. If the exp. date is on the box of canned goods but not on the cans themselves, then the exp. date must be marked on the cans. Cans that are dented on any of the seams cannot be used and must be either discarded or separated and labeled "Do not use" until returned for credit.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(2)(y),(z),(aa),(bb) - warewashing machine, data plate, internal baffles, temperature md, heaters & baskets (pf, c)
high temp dish machine requires high temp measuring device.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(2)(a) - floor, walls, & ceilings, cleanability (c)
Repair floor at dish machine. FRP is coming away from walls and must be reattached.
