Regulation: 511-6-1.03(3)(a) - food safety manager certification (pf)
No CFSM certified or actively present in establishment. Spoke to manager on duty about requirement and provided course information. CFSM must be employed and have supervisory role/authority to direct food prep. Copy of certificate should be posted in view of public and additional copy submitted to health department.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed food splatter buildup on microwave ceiling. Food contact surfaces must be cleaned and sanitized at a rate to prevent buildup. Discussed cleaning schedule.

Observed damaged/missing baseboards throughout main kitchen. Repair/replace damaged baseboards.
