Regulation: 511-6-1.04(6)(h) - ready-to-eat time/temperature control for safety food, disposition (p)
Observed multiple items (pimento cheese>5/16-5/22; chicken salad>5/8-5/14; and chicken breast>5/9-5/15) in multiple containers in bottom of prep table not discarded at discard date. CA:items must be thrown away after 7 days. COS:PIC discarded items.
17D - adequate ventilation and lighting; designated areas used
