Observed multiple items in 2-Door Reach-In (scallops next to RTE food and bag of raw beef in same bin as bags of raw chicken), and in bottom of prep cooler (par-cooked chicken and shrimp above RTE sauces). CA:PIC instructed that items must be stored in correct storage order so as to prevent contamination. COS:PIC moved items.

Observed multiple items (scallops, cooked rice) in 2-Door Reach-In not covered while being stored and not actively being cooled. CA:PIC instructed all items must be covered when stored. COS:PIC covered items.
