6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed TCS food in prep-top/reach-in cooler at temperatures above 41 degrees Fahrenheit. See temp log. COS: Since PIC verified temperatures to be 41 degrees Fahrenheit or lower before lunch, allowed PIC to move TCS foods to 3-door Reach-in-cooler to cool back down. Repair service already requested and scheduled due to additional cooler issue - will service this cooler also.
