6-1A - proper cold holding temperatures

TCS foods in the walk-in cooler observed at 47-48F. The PIC was able to provide proof that they had two delivery trucks back to back causing the temperature increase in the last two hours. The walk-in cooler appears to be function properly. CA: Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C). COS: PIC dropped the temperature in the walk-in cooler; allowing the food to cool down quickly.
