Observed prep cooler with food temps ranging from 43 F to 44 F. Can use ice back for temporarily. Will recheck temperatures.
1-2B - certified food protection manager
Regulation: 511-6-1.03(3)(a) - food safety manager certification (pf)
Observed the facility without a certified food safety manager on staff.
11D - thermometers provided and accurate
Regulation: 511-6-1.05(2)(x) - tmd, located in refrigerators/ hot holding (pf, c)
Observed no hanging thermometers in cooler units.
12B - personal cleanliness

Observed food service workers preparing food without any hair restraints. Observed necklace and hoop earrings being work while preparing food, remove.

Regulation: 511-6-1.05(6)(a) - good repair & proper adjustment (c)
Observed shelving in rear with rack falling down, repair and lift to provide 6 inches of clearance off floor.
17C - physical facilities installed, maintained, and clean

Observed food/trash debris buildup on floors in rear, underneath sinks clean.
