511-6-1.04(4)(m) - Wiping Cloths, Use Limitation (C) (m) Wiping Cloths, Use Limitation.

1. Cloths in-use for wiping food spills from tableware and carry-out containers that occur as food is being served shall be:

(i) Maintained dry; and

(ii) Used for no other purpose.

2. Cloths in-use for wiping counters and other equipment surfaces shall be:

(i) Held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n); and Note: Observed sanitizer bucket in main kitchen on shelf underneath heat lamp unit to have a concentration of 0ppm QAC. PIC remade sanitizer to concentration of 200ppm QAC.

Repair lid for prep top cooler near employee entrance, lid should be used when the prep top cooler is not in use to prevent contamination.

Salad prep top cooler was not plugged in and was holding potentially hazardous foods at 53 degrees. Items were tossed and cooler was plugged back in, the cover on this appliance also needs to be repaired and put back in use.

Fire suppression system was last checked in April of 2023. The hood exhaust system should be checked on an annual schedule. Email EHS when system has been properly checked: brad.krzyzanowski@dph.ga.gov
