6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed multiple TCS food items (see temp log) holding at a temperature greater than 41F in walk in cooler in main kitchen. CA: Cold TCS food items to be held at 41F or below. COS: PIC discarded all TCS food items held in WIC greater than 4 hours. PIC cleaned condenser - ambient temperature reading below 41F at end of inspection.
8-2B - toxic substances properly identified, stored, used
Regulation: 511-6-1.07(6)(c) - storage, separation (p)
Observed spray bottles of chemicals stored above open containers of pizza boxes in alley outside of main kitchen area. CA: Poisonous or toxic materials are to be stored in area that is not above food, equipment, utensils, linens, and single-service or single-use articles. COS: PIC moved chemicals to designated area.

Observed personal medications stored on ledge above food prep cooler/ food prep area in main kitchen area. CA: Medicines for the employee’s use shall be located to prevent the contamination of food, equipment, utensils, linens, and single-service and single-use articles. COS: PIC moved medication away from kitchen.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed shelving units above prep top cooler in main kitchen area with accumulation of dust. CA: Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Facility to be detailed clean by correct by date.
15C - nonfood-contact surfaces clean

Observed accumulation of food residue and debris in multiple reach-in coolers, build up on walls, and grease accumulation on/ around cooking equipment in main kitchen area. CA: Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Facility to be detailed clean by correct by date indicated.
