Routine
6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed eggs, lo mein (pasta), and shrimp in walk in cooler at 46 degrees F for cold holding.
C/A - move all TCS food to different cooler and have unit serviced.
COS - manager moved TCS food to reach in cooler.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(b) - food contact surfaces and utensils - cleaning frequency (p, c)
Observed black build up in ice machine. C/A - regularly clean ice machine to prevent build up.
10D - food properly labeled; original container
Regulation: 511-6-1.04(7)(c) - food labels (pf, c)
Observed food in freezer and cooler without labels in freezer and cooler without labels on them. C/A - label and date all food when repackaging it.
