6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed that the merchandizer cooler in the men's lodge is not reliably holding temperature. Items in the back of the cooler are within temperature range but TCS items in the front and bottom of the cooler are temping between 44-50 degrees F. Staff state that the cooler is opened frequently by customers which is the likely culprit of the temperature variation. COS all items temping above 41 degrees F discarded by staff. Discussed helping cooler maintain better temps by increasing air flow in the unit or storing items more towards the back of the unit.

EPD has determined that this facility's water system requires a permit through their office. Facility notified in 2023 but the process has not been completed.
18 - insects, rodents, and animals not present
Regulation: 511-6-1.07(2)(m) - outer openings protected (c)
Observed that the exterior food storage area no longer has a self-closer. All doors leading in and out of the kitchen, bathrooms, and separate food storage area must be fitted with self-closing doors.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed that the exteriors of the ice machines had debris. Observed that some of the base boards/walls of the service areas had debris. Observed that some of the gaskets in the main kitchens reach-ins are starting to peel away. Observed that one of the doors has a crack causing the gasket to e loose and sometimes prevent the door from closing. All nonfood contact surfaces must be kept clean and in good repair. Surfaces must be sanitized as often as necessary to prevent debris accumulation.
