6-1D - time as a public health control: procedures and records
Regulation: 511-6-1.04(6)(i) - time as a public health control (tphc) (p, pf, c)
Observed multiple items on front food service line (side salad and broccoli) being held without temperature control. Food items were not marked to identify the time from which they were removed from their temperature control measures. COS: PIC wrote time for each item. CA: If time without temperature control is used as a public health control item shall be marked with a time indicating when it is 4 hours past the point in time when the food was removed from temperature control.
