6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed multiple TCS food items stored in reach in cooler in main kitchen above 41F. When being cold held, time/temperature control for safety food shall be maintained at 41°F or below. COS: PIC discarded TCS foods in the cooler and called a company to repair the cooler during inspection.
