Observed employee cup and a shake cup in area with clean dishes. Employee drinks and personal items are to be stored in a designated area to prevent contamination
4-2A - food stored covered
Regulation: 511-6-1.04(4)(c)1(iv) - packaged & unpackaged food, food stored covered(c)
Observed breakfast gravy and grits located in the steam well uncovered. Observed porkchops, steak, burger patties, and breakfast sausage in front RIC stored uncovered. All hot holding and cold holding food shall be store covered to prevent contamination

Observed foods (waffle batter, pickles, tomatoes, biscuits) in storage containers not labeled with its common name. All food removed from its original packaging shall be labeled with its common name.
12C - wiping cloths: properly used and stored

wiping clothes were left out on the counter tops and not in sanitizing solution.
15B - warewashing facilities: installed, maintained, used; test strips

observed hash brown being soaked in carton in bottom of sanitizing sink. correct by not putting food in any of the three compartment sinks and us sinks for intended purposes only.

Observed accumulation of debris and spillage in bottom of reach in coolers. Clean to be free of accumulations. Staff assigned.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed accumulation of debris under the RICs, grill line, and ware washing line. Clean at a frequency to prevent accumulation of debris
