Regulation: 511-6-1.05(3)(h),(i),(j) - temperature measuring device, manual warewashing; sanitizing solutions, testing device (pf)
Observed no sanitizer test strips for the sanitizer side of the 3-compartment sink. Establishment uses chlorine (bleach) as sanitizer. Advised manager that proper strength is 50-100 PPM never to exceed 200PPM, minimum temp of 75 degrees leaving dishes in solution for 10 seconds minimum.
