Observed cooked eggs cooling in sealed bag in walk-in cooler. Person in Charge (PIC) instructed to rapidly cool time/temperature control for safety (TCS) items in shallow uncovered containers or other approved methods. PIC untied bag and placed them in walk-in freezer, cooling properly. COS.
