Observed coffee base (50F, 56F, and 59F) above 41F inside of the reach-in cooler. The ambient air temperature is at 50F. Noticed a gap at the top of the unit door where the gasket is not attached properly to prevent air from exiting out of the unit. All cold-hold TCS foods must be 41F or below. Corrected on Site (COS): Informed the coffee base was inside of the unit for approximately 1 hour. The coffee base was placed in an ice bath to cool down to 41F or below. The unit must be serviced/repaired and the ambient air temperature must be 41F or below before storing TCS foods inside.

The Person In Charge (PIC) not ensuring proper ambient air temperatures and correct cold hold temperatures of the Time/Temperature Control for Safety (TCS) foods inside of the walk-in cooler and reach-in cooler. The walk-in cooler's ambient air temperature was not recorded for today to determine when the walk-in cooler was not operating properly to keep the TCS foods at the correct cold hold temperatures before the arrival of maintenance. The PIC must ensure the employees are properly cold-holding TCS foods, being particularly careful in holding those foods known to cause severe foodborne illness and death, through daily oversight of the employees' routine monitoring of the holding temperatures by using appropriate temperature measuring devices properly scaled and calibrated. Temperatures must be recorded in accordance with the establishment's policy and procedures. PIC must ensure TCS foods are properly cold-held at the correct temperatures and record temperatures according to their policy and procedures.

Observed the incorrect inspection report posted for public view. The inspection report posted was from an inspection in September of 2024. The most current inspection report shall be prominently displayed in public view at all times, within fifteen feet of the front or primary public door between five feet and seven feet from the floor, and in an area where it can be read at a distance of one foot away. Today's inspection report must be posted for public view.

Observed the gasket not attached properly on the reach-in cooler door near the front area of the kitchen. Equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications. Repair gasket on door.

Observed both milkshake base (47F) and Soft Serve (50F) being stored above 41F. It should be noted the temperature near the dispensing area was 40F. Per person in charge the food was placed inside the unit four hours prior to my arrival. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F or below. Food will be discarded, have the unit serviced.

Observed sliced cheddar cheese below the prep line not marked with a temperautre of 64F. If time without temperature control is used as the public health control up to a maximum of 4 hours:The food shall be marked or otherwise identified to indicate the time that is 4 hours past the point in time when the food is removed from temperature control. Employee discarded the cheese.

Observed no inspection report posted in the drive thru window. Food service establishments with drive-thru windows will post the current inspection report, and also have the inspection report posted so that a minimum of the top one-third of a copy of the current inspection report is visible through each window allowing customers to easily read the score, date of inspection and establishment information.
