Facility must utilize either time control or temperature control for all items. If utilizing time control ensure facility has written procedures and is following written procedures. Facility must have written procedures for tracking total time not to exceed 24hrs for all items offered for consumer self-service. If customer is allowed to cook their own food from raw a consumer advisory is required for all those items. Greenshell mussels purchased from A&D foods. If supplier for any shellstock changes ensure supplier appears on ICSSL list. All items offered for consumer self-service must be protected from contamination. With current setup all items in glass door reach in coolers must be individually wrapped to protect all items from contamination when doors are opened.
