Containers of cheese slices in prep cooler should not be overfilled in order to maintain proper cold holding temperatures. Note: All employees with facial hair 1/2 inch or longer must wear a beard net. Note: If employee beverages are in kitchen, they must be in a single use cup with a lid and straw away from food prep areas.
