6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed TCS foods in walk in cooler coldholding above 41F. (Shredded cheese 45, raw steak strips 44, liquid egg 44, butter 45, sliced tomatoes 46, ranch 47). CA: Cold TCS food shall be maintained at 41F or below. COS: Not noted as corrected on site. CFSM discarded all TCS foods coldholding above 41F and prepped over four hours prior. All TCS foods found to be prepped less than four hours prior were relocated to freezers for rapid cooling. Walk in cooler will be serviced and rechecked by Health Department before being used to coldhold food items.
