Mussels were in the walk-in cooler in metal pans with no shellfish shipper tags attached. COS- mussels were discarded. Advised PIC to keep tags with product until empty, then maintain tags for 90 days in file.

Observed utensils kept in a cup with water at room temperature in front of grill. COS-removed. Advised PIC to properly store utensils in clean, dry, container or in water at or above 135F.
