Inspector observed TCS foods cold-held at temperatures exceeding 41°F; see temp log. COS - PIC Discarded. Corrective action: TCS foods must be cold-held at 41°F or below
6-1B - proper hot holding temperatures

Inspector observed TCS foods hot-held at temperatures below 135°F; see temp log. COS - PIC will switch boba to time control; time control information provided and PIC will update SOP. Corrective action: TCS foods must be hot-held at 135°F or higher.
