Regulation: 511-6-1.05(7)(b) - food contact surfaces and utensils - cleaning frequency (p, c)
Observation: Observed residue accumulation on the interior surface of the microwave oven located on the main service line. CA: Food contact surfaces must be maintained clean to sight and touch. COS: The CFSM cleaned the microwave oven.
8-2B - toxic substances properly identified, stored, used
Regulation: 511-6-1.07(6)(b) - working containers, common name (pf)
Observation: Observed unlabeled spray bottle of chlorine sanitizer used to clean tables. CA: Working containers of chemicals must be properly labeled with their common name. COS: The chlorine sanitizer bottle was labeled with its common name.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(a) - good repair & proper adjustment (c)
Observation: Observed gaskets on the prep top cooler located on the main service line in poor repair and in need of repair/ replacement. CA: Equipment must be maintained in a state of good repair. COS: No COS noted at this time. The CFSM will have the gaskets repaired/ replaced.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(2)(cc) - warewashing, automatic dispensing of detergents and sanitizers (pf)
Observation: Observed chemical dishmachine sanitizer dispensing sanitizer at less than 50 ppm chlorine. The dishmachine was not in use at the time of inspection. CA: Chemical dishmachine sanitizers must be maintained at a ppm as stated by the manufacturer. COS: No COS noted at this time. The facility will contact a licensed technician to have the dishmachine serviced. The facility will use the 3-compartment sink to properly clean and sanitizes items until the dishmachine can be repaired. This will be rechecked by the Health Department.
