Regulation: 511-6-1.05(7)(b) - food contact surfaces and utensils - cleaning frequency (p, c)
Observed black build-up on interior of drink dispenser nozzles in the drive thru area and in lobby. CA: Equipment such as, beverage dispensing nozzles, shall be cleaned at a frequency necessary to preclude accumulation of soil. COS: Drink dispenser nozzles were washed, rinsed and sanitized.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observed in-use wiping clothes store in chemical sanitizer solution below the required concentration. CA: Cloths in-use for wiping counters and other equipment surfaces shall be held between uses in a chemical sanitizer solution at the required concentration (200-400ppm) COS: Sanitizer buckets were remade at correct sanitizer concentration.
