Observed multiple potentially hazardous TCS foods cold held at greater than 41 degrees Fahrenheit (Chicken Wings 45F, Shredded Cheese 46F, Cheese Stick 45F) in the bottom portion of the prep top cooler on the main prep line.

Corrective Action: Discussed proper cold holding of TCS foods with the PIC. Per the PIC, the items had been stored in the prep top cooler since the night prior. The PIC discarded all potentially hazardous TCS foods in the bottom part of the cooler. Discussed storing less items in the bottom of the cooler to prevent over filling with the PIC. PIC placed a work order to have the cooler serviced and will not use the bottom portion of the cooler to cold hold TCS foods until it has been rechecked by the Health Department. Reference temperatures were taken of TCS food items stored in the top part of the cooler (Deli Ham 39F, Sausage 36 F, Shredded Cheese 41F).

Corrective Action: Discussed cold holding and cooling methods for TCS foods with the PIC. Per the PIC, the sauce containers had been prepared the day before and been placed into the walk-in cooler to be cooled. The PIC discarded all marinara sauce containers cold holding above 41 degrees Fahrenheit and will educate the staff on proper cooling methods. Reference temperatures were taken in the walk-in cooler to ensure functionality (Cheese Sticks 41, Garlic Parmesan Sauce 40F, Barbeque Sauce 40 F, Marinara Sauce 41F).
