6-1B - proper hot holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; hot holding (p)
Observed two containers (metal) of chili in a steam well warmer held under 135F due to the unit being turned off.
CA: Employee discarded chili and replaced with new chili.
4-2A - food stored covered
Regulation: 511-6-1.04(4)(c)1(iv) - packaged & unpackaged food, food stored covered(c)
Observed hamburger patties stored in the walk in freezer and a grill prep freezer near the fryer and grill stored with no covering.
Rule: Stored food must be kept in packages, covered containers, or wrappings, except for loosely covered or uncovered containers in which food is being cooled if protected from overhead contamination.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed heavy food splatter/grease buildup on floors, walls, hood and ceiling tiles. Observed door hinges and bottom part of door to the bathroom and freezer covered in debris and rust.
RCA: Clean facility regularly to eliminate contamination of food products.
