2-2A - management knowledge, responsibilities, reporting
Regulation: 511-6-1.03(2)(o) - person-in-charge duties (pf)
PIC could not demonstrate that employees were informed that they had to report diseases and illnesses; did not have employee reporting health agreements. CA: Gave PIC employee reporting agreements to use in the future and the decision tree
2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.06(2)(o) - using a handwashing sink- operation & maintenance (pf)
Handwashing sink should be accessible. Observed one hand sink in the kitchen with chicken fillet and the other hand sink with a knife that needed to be washed.
COS: Advised PIC that handwashing sinks are for handwashing only; employee removed utensil and food item from sink.
2-2E - response procedures for vomiting & diarrheal events
Regulation: 511-6-1.03(6) - clean-up of vomiting and diarrheal events(pf)
Clean up procedures of vomit and diarrheal events not present. Need directions, epa sanitizer, and kit to clean up blood, vomit, fecal incidents. CA: Provided PIC with clean-up procedures for bleach.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(8)(a) - before use after cleaning(p)
Utensils and food-contact surfaces of equipment shall be sanitized before use after cleaning.
Observed sanitizer bucket reading of 0ppm.
CA: PIC remade sanitizer water and new readings were 100ppm.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Wiping cloths shall be held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n). Observed wiping cloths stored on counter tops outside of the sanitizing buckets. COS: Had employee put wiping cloths in sanitizing buckets with proper concentration of sanitizer.
