Observed metal pans stacked while still wet on the drying rack in the dish area. CA: After cleaning and sanitizing, equipment and utensils shall be air-dried or used after adequate draining before contact with food; and may not be cloth dried except that utensils that have been air-dried may be polished with cloths that are maintained clean and dry. COS: Person In-Charge separated the metal pans to allow them to air dry properly.

CA: Food shall be stored in packages, covered containers, or wrappings, except for loosely covered or uncovered containers in which food is being cooled, to be protected from overhead contamination. Observed a food container of boiled and peeled eggs and a food container of cooked chicken patties without any lids or coverings in the salad prep top cooler. COS: Food employee provided lids for each food container in the salad prep top cooler.
