OBSERVED REACH IN COOLER ENTIRELY FILLED WITH CONTAINERS AND BOWLS OF SALSA PREPPED TODAY THAT WERE STILL COOLING DOWN. MULTIPLE LAYERS OF TRAYS AND CONTAINERS WERE PREVENTING PROPER AIR FLOW TO COOL SALSA RAPIDLY. CA: TCS FOOD ITEMS SHALL BE COOLED USING RAPID COOLING TECHNIQUES AND PROPERLY ARRANGED IN EQUIPMENT. COS: PIC HAD EMPLOYEE MOVE A PORTION OF THE CONTAINERS TO ANOTHER COOLER TO CONTINUE COOLING AND ALLOW PROPER AIR FLOW.
