Regulation: 511-6-1.06(2)(o) - using a handwashing sink- operation & maintenance (pf)
Observed pitcher of water stored in and a cleaning rag stored on the handwash sink in the main kitchen. A handwashing facility may not be used for purposes other than handwashing. Pitcher and rag removed from sink and accessibility explained to employees during inspection.
6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(h) - ready-to-eat time/temperature control for safety food, disposition (p)
Observed multiple containers of consumer food stored in walk-in cooler beyond label expiration day, including sausage and olives. A food that requires datemarking shall be discarded if it exceeds 7 days. Manager discarded expired foods during inspection.
11D - thermometers provided and accurate
Regulation: 511-6-1.05(2)(x) - tmd, located in refrigerators/ hot holding (pf, c)
Observed walk-in cooler temperature measuring device by door not calibrated/reading correct temperature, no inside temperature measuring device and reach-in freezer with no temperature measuring device.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(5)(j) - using dressing rooms & lockers, used for changing clothes and storing employee belongings (c)
Observed employee personal items, drink, and apron stored on food storage shelf. All employee items shall be stored in a designated area away from consumer items. PIC moved items during inspection.
