6-1D - time as a public health control: procedures and records
Regulation: 511-6-1.04(6)(i) - time as a public health control (tphc) (p, pf, c)
Observed potentially hazardous food (raw shelled eggs) held using time as a public health control with the wrong start and end time marking. COS, PIC labelled the eggs with the proper date and time placed out and discard time.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed several skillets stored as clean in the drawer under the grill that contained dried food debris and grease. COS, skillets were washed, rinsed, and sanitized.
