6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed chicken and shredded cheese stored in the reach in cooler under the grill with temperatures above 41 degrees. COS, the items were moved to the walk in coolers since the product labels had a date/time that allowed for the cooling process to take place. Have unit repaired to cold hold at temp of 41 or below before it is used to store TCS foods. Contact Danielle once repaired.
