6-1B - proper hot holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; hot holding (p)
Observed container of cooked chicken tenders hot holding on steam well (less than 4-hours) not turned on at time of inspection. Advised PIC Hot and Cold Holding. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 135°F (57°C) or above. COS: PIC voluntarily discarded out-of-temperature chicken tenders.

Observed insufficient food allergy awareness training documents, lacking signs/symptoms and cross-contact prevention methods. Advised PIC Employees are properly trained in food safety, including food allergy awareness, as it relates to their assigned duties. Food allergy awareness includes describing foods identified as major food allergens and the symptoms that a major food allergen could cause in a sensitive individual who has an allergic reaction.

Observed steam well (1) in disrepair at cookline at time of inspection. Advised PIC equipment shall be maintained in a state of repair and adjusted in accordance with manufacturer's specifications.
