Observed cooked white rice cooling tightly covered on the counter in the main kitchen. Advised PIC on proper cooling methods: under refrigeration uncovered or loosely covered. COS: PIC placed the container of rice uncovered in the WIC for proper cooling.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(1)(i) - nonfood-contact surfaces (c)
Observed shelving underneath grill with cardboard lining shelving. Advised PIC nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning shall be constructed of a corrosion-resistant, nonabsorbent, and smooth material. Advised PIC to rem cardboard lining shelfing underneath grill and to replace with smooth, durable, and easily cleanable material.

Observed nonfood contact surface of RIF #2 stored as clean with food debris on its interior. Advised PIC nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Advised PIC to thoroughly clean nonfood contact surfaces of the interior of RIF #2
