Observed raw chicken stored above salsa and with tortillas in walk in cooler. COS: PIC moved raw chicken to bottom shelf with other raw chicken. CA: Store food items according to final cook temp.
12A - contamination prevented during food preparation, storage, display

Observed raw cubed beef stored directly on floor in walk in cooler. Advised to relocate to shelf. CA: Store food items minimum 6-inches off floor.
12D - washing fruits and vegetables
Regulation: 511-6-1.04(4)(g) - washing fruits & vegetables (pf)
Observed meat being thawed in vegetable sink. Advised vegetable sink is for washing vegetables only. CA: Vegetable sink is for washing vegetables only. Must sanitize sink and remove meat. Meat may be thawed in sanitize compartment of 3-compartment sink sufficed it is sanitized before and after thawing and is not in use for washing dishware.
