Observed handwashing sink in the front to not have hot water available.

RCA: Hot water generation and distribution systems shall be sufficient to meet the peak hot water demands throughout the food service establishment.

Observed heaving food debris and grease build up in both interior and exterior of hot holding unit.

CA: PIC cleaned hot holding unit. Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

Observed food items (ribs, brisket) wrapped and sitting at room temperature waiting to go the warmer cabinet. Upon conversation with staff, the items were left at during the lunch rush and they began wrapping the items afterwards. Observed food items (sausage, chicken, brisket, pork) not holding in the warmer cabinet at 135 or above.

CA: Items from that were sitting out and in the warmer cabinet were placed back in the smoker to be brought back to 165F. Time/temperature control for safety food shall be maintained at 135°F (57°C) or above.

Observed the hand sink in the front food service area not operable and leaking at te pipe. Inspector was unable to wash hands or verify hot water working at the sink due to the leak.

RCA: The sink shall be repaired as soon as possible to allow for proper handwashing in the front food service area. A handwashing sink shall be maintained so that it is accessible at all times for employee use.

Observed cut fries on a sheet pan in the walk-in cooler stored without protective covering. Observed uncovered frozen food items in the deep freezer.

CA: PIC placed coverings over food items. RCA: Food shall be protected from contamination by storing the food in packages, covered containers, or wrappings, except for loosely covered or uncovered containers in which food is being cooled if protected from overhead contamination.

Observed cans of beans, oil, and a box of potatoes stored on the floor in the kitchen. Observed a box of brisket, margarine, and syrup stored on the floor in the walk-in cooler.

CRA: Shelving shall be rearranged to make space for additional items to be stored at least 6 inches above the ground.

Observed metal pans above the three compartment to be sticky to the touch. Observed can opener to have black debris on the sharp opener attachment. RCA: All dishes and utensils shall be cleaned ( washed rinsed and sanitized) such that it is clean to sight and touch.

Observed three containers of cooked stew held past the best by date of 07/17. COS/CA: PIC discarded items RCA: A food that requires datemarking shall be discarded if it: (i) Exceeds 7 days, not including the time that the product is frozen; P (ii) Is in a container or package that does not bear a date or day; P or (iii) Is appropriately marked with a date or day that exceeds 7 days . P 2. Refrigerated, ready-to-eat, time / temperature control for safety food prepared in a food service establishment and dispensed through a vending machine with an automatic shutoff control shall be discarded if it exceeds 7 days. P

Observed heavy staining, debris and grease residue within the interior of cold holding and hot holding units. Observed the racks within the reach in and walk in cooler to be soiled. RCA: Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

Observed exterior of items under hood to be soiled with heavy grease deposits. RCA: Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.
