Observed cooked TCS foods being cooled in reach-in coolers that would not have meet 135F to 70F 2 hour cooling requirement without corrective action. CA - Discussed with CFSM and food items were moved to walk-in freezer and were left uncovered or loosely covered to encourage rapid cooling. Temperatures taken later during inspection revealed food items were cooled below 70 degrees in less than 2 hrs.

CA - Discussed with CFSM that all employee personal items should be stored in designated areas where contamination of food, equipment, utensils, linens and single-service and single-use articles cannot occur. CFSM moved items to approved designated areas (front counter under register or office area or will install coat hook in area not above food, equipment, or prep surfaces.
