At time of inspection, observed lack of soap at the front handwashing sink. COS: PIC placed soap at the handwashing sink.

At time of inspection, observed lack of paper towel at the front handwashing sink. COS: PIC placed paper towel at the handwashing sink.
11C - approved thawing methods used
Regulation: 511-6-1.04(6)(c) - thawing (c)
At time of inspection, observed commercially vacuum-sealed fish thawing in the FFS reach-in cooler, bearing instructions stating: "Remove from packaging before thawing under refrigeration." COS: The owner removed the reduced-oxygen packaging (ROP) fish from the vacuum-sealed package and placed in a container (covered) in the RIC. ROP fish that states it must be kept frozen until use must be thawed under refrigeration AFTER being removed from the packaging.

At time of inspection, observed a container of water at 64 degrees F, containing four knives on the prep. counter. COS: PIC removed the knives to be washed, rinsed, & sanitized. PIC states that, going forward, the knives will be washed, rinsed, and sanitized at least every four (4) hours.

At time of inspection, observed bowls being used as scoops in bins of rice. COS: PIC removed the bowls. Scoops with designated handles must be used and the handles must not contact the food product.
