4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed dish machine sanitizer levels too low to show up on test strips. CA: Dish machine must have correct levels of sanitizer to properly sanitize dishes. COS: Dishes must be manually washed and sanitized until dish machine is fixed.
6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed opened gallon of milk bearing no marked 7 day expiration date. CA: TCS foods that require date marking upon prep/opening shall be labelled with an expiration date not to exceed 7 days. COS: PIC stated milk was opened this morning and date marked.
