High Priority - Cooked/heated time/temperature control for safety food not cooled from 135 degrees Fahrenheit to 41 degrees Fahrenheit within 6 hours. Observed at tall stainless reach in cooler in prep kitchen hallway: Cooked briskets in Metal container covered with plastic wrap and metal lid, stacked on top of each other at 50F-53F - (Cooling at 9:45 since 5:00pm the night before per operator) food did not cool from 135F to41F with in 6 hours.
