As per operator food not portioned or prepared today. In unit less than 4hrs. Observed cooler cold temperature setting sitting at 42. Reviewed proper temperature and temperature setting on cold holding units to operator. Operator placed food in walk in cooler for quick chill. Corrective Action Taken
